Weight Watchers Red Velvet Pie
Ingredients:
For the Pie:
- 3 eggs
- 1 cup sugar
- 200g (7 oz) butter at room temperature
- 1 tablespoon unsweetened cocoa powder
- 1 pinch of salt
- 1 teaspoon vanilla essence
- 1 teaspoon bicarbonate of soda
- 2 tablespoons red food coloring (look for natural, low-sugar options)
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
For the Topping:
- 1 box of fat-free or reduced-fat milk cream
Instructions:
For the Pie:
- Preheat your oven to 350°F (175°C). Grease a pie dish with cooking spray.
- In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, beating well with each addition.
- In a separate bowl, mix the cocoa powder, salt, vanilla essence, bicarbonate of soda, and red food coloring until well combined. Add this mixture to the egg and butter mixture and stir until it’s fully incorporated.
- Gently fold in the all-purpose flour and baking powder until the batter is smooth.
- Pour the batter into the prepared pie dish.
- Bake in the preheated oven for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the pie to cool completely before adding the topping.
For the Topping:
- Whip the fat-free or reduced-fat milk cream until it forms stiff peaks.
- Once the pie has cooled, spread the whipped cream over the top of the pie.
- You can garnish with a dusting of cocoa powder or grated dark chocolate for extra flavor and presentation.
