2 Point Cherry cheesecake jars for desser
Ingredients:
For the Cheesecake:
- 1/2 cup fat-free cream cheese, softened
- 2 tablespoons non-fat Greek yogurt
- 1 tablespoon sugar substitute (such as Stevia or Splenda)
- 1/2 teaspoon vanilla extract
For the Cherry Topping:
- 1/2 cup fresh or canned cherries, pitted and halved
- 1 tablespoon sugar substitute
- 1/2 teaspoon lemon juice
For the Crust:
- 2 tablespoons crushed graham crackers (you can use low-fat or sugar-free)
Instructions:
- Prepare the Cherry Topping:
- In a small saucepan, combine the cherries, sugar substitute, and lemon juice.
- Cook over medium heat for 5-7 minutes or until the cherries soften and release their juices.
- Remove from heat and let it cool.
- Make the Cheesecake Filling:
- In a bowl, whisk together the softened cream cheese, Greek yogurt, sugar substitute, and vanilla extract until smooth.
- Assemble the Jars:
- Divide the crushed graham crackers evenly between two jars, creating a thin layer at the bottom.
- Spoon the cheesecake filling over the graham cracker layer, dividing it equally between the two jars.
- Top the cheesecake layer with the cherry topping.
- Chill and Serve:
- Place the jars in the refrigerator for at least 1-2 hours to allow the cheesecake to set.
- Once chilled, you can optionally garnish with additional graham cracker crumbs or a dollop of whipped cream.
