0 Point Meringue Cookies

Ingredients:-

  • 3 large egg whites (at room temperature)
  • 1/4 teaspoon cream of tartar
  • 1/2 cup granulated sugar substitute (like erythritol or monk fruit) or to taste
  • 1 teaspoon vanilla extract (optional)

Instructions:-

  1. Preheat your oven to 225°F (110°C). Line a baking sheet with parchment paper.
  2. In a clean, dry mixing bowl, beat the egg whites on medium speed until foamy.
  3. Add the cream of tartar and continue to beat until soft peaks form.
  4. Gradually add the sugar substitute a little at a time while beating the egg whites. Beat until stiff, glossy peaks form. You can add the vanilla extract at this stage if using.
  5. Transfer the meringue mixture to a piping bag fitted with a star tip or simply use a spoon to dollop small portions onto the prepared baking sheet.
  6. Bake the meringues in the preheated oven for about 1 to 1.5 hours, or until they are dry and crisp. The baking time may vary based on the size of your meringues.
  7. Once done, turn off the oven and let the meringues cool inside the oven with the door slightly ajar. This helps them dry out further.
