Ingredients:
For the Crust (Optional, but keep in mind it adds points):
- Crushed graham crackers (use a small amount for flavor without adding too many points)
For the Filling:
- 2 cups non-fat Greek yogurt
- 1 package (about 0.3 oz) sugar-free flavored gelatin (such as strawberry or raspberry)
- 1/4 cup hot water
- 1 teaspoon vanilla extract
- 1/2 cup sugar substitute (adjust to taste)
- A pinch of salt
For the Topping (Optional):
- Fresh berries or a sugar-free fruit compote
Instructions:
- Prepare the Crust (Optional):
- If you choose to include a crust, press a small amount of crushed graham crackers into the bottom of a pie dish.
- Prepare the Gelatin:
- In a small bowl, dissolve the sugar-free flavored gelatin in hot water. Allow it to cool slightly.
- Make the Filling:
- In a mixing bowl, combine the non-fat Greek yogurt, vanilla extract, sugar substitute, and a pinch of salt. Mix well.
- Add Gelatin Mixture:
- Pour the slightly cooled gelatin mixture into the yogurt mixture. Stir until well combined.
- Pour into Crust (if using) or a Dish:
- Pour the filling into the pie dish with the crust or directly into a dish if you’re skipping the crust.
- Chill:
- Place the cheesecake in the refrigerator and let it set for at least 4 hours or until firm.
- Add Topping (Optional):
- Before serving, you can top the cheesecake with fresh berries or a sugar-free fruit compote.
- Serve:
- Cut into slices and serve your 0-point cheesecake.
