Zucchini Corn Parmesan Bake

This was delicious and gone by the next day, always a good sign. Another good recipe for using up garden zucchini and corn.

3 tablespoons olive oi

1/2 cup diced red onion

1 teaspoon minced garlic

4 medium zucchini, cubed

1 cup frozen corn, I used fresh corn from the garden

1/2 cup shredded Mozzarella cheese

1/4 cup shredded Parmesan cheese

salt and pepper

1 Heat oven to 350.

2 In a large skillet, heat olive oil over medium high heat and then add onion and garlic. Cook for 5 minutes or until onion is tender.

3 Stir in zucchini and cook 8 – 10 minutes or until zucchini is lightly browned.

4 Remove from heat and add corn, cheeses, and salt and pepper.

5 Spoon into a 9 x 9″ pan and bake uncovered for 15 minutes.
