Zesty Shrimp & Avocado Rice Bowls with Cilantro Lime Sauce

🛒 Ingredients
For the Shrimp:
- 1 lb raw shrimp, peeled & deveined
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp paprika
- ½ tsp cumin
- ½ tsp garlic powder
- ¼ tsp cayenne (optional, for heat)
- Salt & pepper to taste
- Juice of ½ lime
For the Rice Base:
- 2 cups cooked white or brown rice (or quinoa)
- 1 tbsp lime juice
- Zest of 1 lime
- Salt to taste
Toppings:
- 1 ripe avocado, diced or sliced
- 1 cup cherry tomatoes, halved
- ½ cup corn (fresh, frozen, or canned)
- ¼ cup red onion, thinly sliced
- Fresh cilantro, chopped
- Lime wedges (for serving)

🌿 Cilantro Lime Sauce:
- ½ cup Greek yogurt (or sour cream)
- ½ cup fresh cilantro leaves
- Juice of 1 lime
- 1 garlic clove
- 1 tbsp olive oil
- Salt to taste
- 1–2 tsp honey or maple syrup (optional, to balance acidity)
- 1–2 tbsp water (to thin, as needed)
Blend everything together in a food processor or blender until smooth and creamy. Adjust salt/lime to taste.
🔥 Instructions
- Cook the Shrimp:
- Toss shrimp with olive oil, spices, salt, pepper, and lime juice.
- Heat a skillet over medium-high heat. Cook shrimp for 2–3 minutes per side until pink and opaque. Remove from heat.
- Prepare the Rice:
- Fluff cooked rice with a fork, stir in lime juice, zest, and a pinch of salt.
- Assemble the Bowls:
- Add rice as the base.
- Top with shrimp, avocado, tomatoes, corn, red onion, and cilantro.
- Drizzle with Sauce:
- Spoon or drizzle cilantro lime sauce generously over the bowls.
- Serve:
- Garnish with extra lime wedges and fresh cilantro. Serve warm or chilled!
