Zero Point Chicken Salad
Ingredients:
- 2 cups cooked chicken breast, shredded or diced
- 1/2 cup fat-free Greek yogurt
- 1/4 cup diced celery
- 1/4 cup diced red onion
- 1/4 cup diced bell pepper (any color)
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- Optional: fresh herbs like parsley or dill for garnish
Instructions:
- Prepare the Chicken: Cook chicken breasts until fully cooked, then shred or dice into bite-sized pieces.
- Mix Dressing: In a large bowl, combine Greek yogurt, lemon juice, Dijon mustard, salt, and pepper. Adjust seasoning to taste.
- Combine Ingredients: Add shredded chicken, diced celery, red onion, and bell pepper to the bowl with the dressing. Mix well until everything is evenly coated.
- Chill: Cover the bowl and refrigerate for at least 30 minutes to let the flavors meld together.
- Serve: Garnish with fresh herbs if desired before serving. This chicken salad can be enjoyed on its own, with lettuce wraps, or in sandwiches.
