WW-Zucchini Lasagna Recipe

Ingredients:

For the Zucchini Roll-Ups:

  • 2 large zucchinis, thinly sliced lengthwise
  • 1 cup part-skim ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup homemade or store-bought light marinara sauce (look for a low-point option)
  • 1 cup part-skim shredded mozzarella cheese
  • Fresh basil leaves for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. Lay out the zucchini slices on a paper towel and lightly salt them. Let them sit for 10 minutes to release excess moisture, then pat them dry with another paper towel.
  3. In a bowl, combine part-skim ricotta cheese, grated Parmesan cheese, egg, dried basil, dried oregano, salt, and pepper. Mix well.
  4. Spread a thin layer of light marinara sauce on each zucchini slice.
  5. Spoon a tablespoon of the ricotta mixture onto each zucchini slice and roll them up.
  6. Place the zucchini roll-ups in the baking dish, seam side down.
  7. Pour the remaining light marinara sauce over the roll-ups and sprinkle part-skim shredded mozzarella cheese on top.
  8. Bake in the preheated oven for about 30-35 minutes, or until the cheese is bubbly and golden.
  9. Garnish with fresh basil leaves before serving.
