WW-Zucchini Lasagna Recipe
Ingredients:
For the Zucchini Roll-Ups:
- 2 large zucchinis, thinly sliced lengthwise
- 1 cup part-skim ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
- 1 cup homemade or store-bought light marinara sauce (look for a low-point option)
- 1 cup part-skim shredded mozzarella cheese
- Fresh basil leaves for garnish
Instructions:
- Preheat your oven to 375°F (190°C) and grease a baking dish.
- Lay out the zucchini slices on a paper towel and lightly salt them. Let them sit for 10 minutes to release excess moisture, then pat them dry with another paper towel.
- In a bowl, combine part-skim ricotta cheese, grated Parmesan cheese, egg, dried basil, dried oregano, salt, and pepper. Mix well.
- Spread a thin layer of light marinara sauce on each zucchini slice.
- Spoon a tablespoon of the ricotta mixture onto each zucchini slice and roll them up.
- Place the zucchini roll-ups in the baking dish, seam side down.
- Pour the remaining light marinara sauce over the roll-ups and sprinkle part-skim shredded mozzarella cheese on top.
- Bake in the preheated oven for about 30-35 minutes, or until the cheese is bubbly and golden.
- Garnish with fresh basil leaves before serving.
