WW Wonton Soup

Ingredients:

For Wontons:

  • 1 cup ground chicken or pork (cooked and cooled)
  • 1/2 cup finely chopped cabbage
  • 1/4 cup finely chopped green onions
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon grated ginger
  • 1/2 teaspoon minced garlic
  • 1 package whole wheat wonton wrappers

For Soup:

  • 4 cups chicken or vegetable broth
  • 1 cup sliced mushrooms
  • 1 cup baby spinach or bok choy leaves
  • 1/4 cup sliced green onions
  • 1 teaspoon soy sauce
  • 1/2 teaspoon sesame oil
  • Salt and pepper to taste

Instructions:

  1. In a mixing bowl, combine the ground meat, cabbage, green onions, soy sauce, sesame oil, ginger, and garlic. Mix well to form the wonton filling.
  2. Place a small spoonful of the filling in the center of each wonton wrapper. Moisten the edges of the wrapper with water and fold it in half to form a triangle. Press the edges to seal, ensuring there are no air pockets.
  3. In a large pot, bring the chicken or vegetable broth to a simmer.
  4. Add the sliced mushrooms, soy sauce, and sesame oil to the simmering broth.
  5. Gently place the wontons into the simmering broth and cook for about 5-7 minutes or until the wontons are cooked through and float to the top.
  6. Add the baby spinach or bok choy leaves to the soup and cook for an additional 2 minutes or until they are wilted.
  7. Season the soup with salt and pepper to taste. Stir in the sliced green onions.
  8. Ladle the soup into bowls and serve hot.
