WW MARRY ME CHICKEN
Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 cup cherry tomatoes, halved
- 3/4 cup reduced-sodium chicken broth
- 1/2 cup non-fat Greek yogurt
- 1/4 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Fresh basil or parsley for garnish (optional)
Instructions:
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with salt and pepper.
- Heat olive oil in an oven-safe skillet over medium-high heat. Brown the chicken breasts on both sides, about 3-4 minutes per side.
- Remove the chicken from the skillet and set it aside.
- In the same skillet, add cherry tomatoes and sauté for 2-3 minutes until they start to soften.
- Add minced garlic to the skillet and sauté for an additional 30 seconds.
- Pour in the chicken broth, scraping the bottom of the skillet to release any browned bits.
- Return the browned chicken breasts to the skillet, nestling them among the tomatoes.
- In a bowl, whisk together non-fat Greek yogurt, Parmesan cheese, dried oregano, and dried thyme.
- Pour the yogurt mixture over the chicken and tomatoes in the skillet.
- Transfer the skillet to the preheated oven and bake for about 20-25 minutes or until the chicken is cooked through.
- Garnish with fresh basil or parsley if desired.
