WW MARRY ME CHICKEN

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 cup cherry tomatoes, halved
  • 3/4 cup reduced-sodium chicken broth
  • 1/2 cup non-fat Greek yogurt
  • 1/4 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Fresh basil or parsley for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. Brown the chicken breasts on both sides, about 3-4 minutes per side.
  4. Remove the chicken from the skillet and set it aside.
  5. In the same skillet, add cherry tomatoes and sauté for 2-3 minutes until they start to soften.
  6. Add minced garlic to the skillet and sauté for an additional 30 seconds.
  7. Pour in the chicken broth, scraping the bottom of the skillet to release any browned bits.
  8. Return the browned chicken breasts to the skillet, nestling them among the tomatoes.
  9. In a bowl, whisk together non-fat Greek yogurt, Parmesan cheese, dried oregano, and dried thyme.
  10. Pour the yogurt mixture over the chicken and tomatoes in the skillet.
  11. Transfer the skillet to the preheated oven and bake for about 20-25 minutes or until the chicken is cooked through.
  12. Garnish with fresh basil or parsley if desired.
