WW CHICKPEAS SOUP

Ingredients:

  • 1 can (15 oz) of chickpeas, drained and rinsed
  • 1 small onion, chopped
  • 2 cloves of garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 can (14 oz) of diced tomatoes
  • 4 cups of low-sodium vegetable broth
  • 1 teaspoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish (optional)

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 2-3 minutes.
  2. Add the minced garlic, diced carrot, and celery to the pot. Sauté for an additional 3-4 minutes, or until the vegetables start to soften.
  3. Stir in the ground cumin, ground coriander, smoked paprika, salt, and pepper. Cook for another minute or so to toast the spices.
  4. Add the drained and rinsed chickpeas, diced tomatoes, and vegetable broth to the pot. Stir well.
  5. Bring the soup to a boil, then reduce the heat to low, cover, and let it simmer for about 15-20 minutes, or until the vegetables are tender and the flavors have melded together.
  6. Taste the soup and adjust the seasonings, if necessary, by adding more salt and pepper to suit your taste.
  7. Serve the WW Chickpea Soup hot, garnished with fresh parsley or cilantro if desired.
