Weight Watchers Zero Point Egg Salad

Ingredients:

  • 6 hard-boiled eggs, peeled and chopped
  • 1/4 cup fat-free Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh chives
  • Salt and pepper, to taste
  • Optional: diced celery, diced red onion, or other vegetables of your choice

Instructions:

  1. In a bowl, combine the chopped hard-boiled eggs, Greek yogurt, Dijon mustard, lemon juice, and chopped chives.
  2. Mix well until everything is evenly combined.
  3. Season with salt and pepper to taste.
  4. If desired, add in diced celery, red onion, or any other vegetables you prefer for added crunch and flavor.
  5. Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together.
  6. Serve as a sandwich filling, on top of salad greens, or enjoy it as a dip with raw veggies.
