Weight Watchers Zero Point Egg Salad
Ingredients:
- 6 hard-boiled eggs, peeled and chopped
- 1/4 cup fat-free Greek yogurt
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh lemon juice
- 2 tablespoons chopped fresh chives
- Salt and pepper, to taste
- Optional: diced celery, diced red onion, or other vegetables of your choice
Instructions:
- In a bowl, combine the chopped hard-boiled eggs, Greek yogurt, Dijon mustard, lemon juice, and chopped chives.
- Mix well until everything is evenly combined.
- Season with salt and pepper to taste.
- If desired, add in diced celery, red onion, or any other vegetables you prefer for added crunch and flavor.
- Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together.
- Serve as a sandwich filling, on top of salad greens, or enjoy it as a dip with raw veggies.
