Weight Watchers White Chicken Enchiladas
These Weight Watchers White Chicken Enchiladas have become a family favorite! They are super easy to make, creamy, cheesy and delicious!

Ingredients
- 8 oz. package of light cream cheese
- 2 (12.5 oz. ) cans white chicken breast, drained ( I love Kirkland brand) or 10 oz. cooked, skinless, boneless, shredded chicken breasts
- 1 ( 4 oz.) can of roasted, peeled green chiles
- 10 oz. can of green enchilada sauce
- 12 tortillas-one points tortillas such as Mission low carb, La Banderita® Carb Counter, or Ole Extreme Wellness tortillas
- 1/2 cup fat free or light shredded cheddar cheese
- 3 green onions, diced for garnish (optional)
- 2 spoon canned jalapeños, diced for garnish ( optional)
Instructions
- Preheat oven to 350 degrees.
- Combine, drained chicken, cream cheese and green chiles in a large mixing bowl.
- Stir until well combined.
- Spray a baking dish with non-stick cooking spray (13 x 9).
- Use 1/4 cup of chicken mixture to top each tortilla.
- Roll up and place the seam down in the prepared baking dish.
- Repeat for all 12 tortillas.
- Pour enchilada sauce evenly over the enchiladas.
- Sprinkle cheese evenly over the top of the sauce.
- Sprinkle diced green onions and jalapeños over the top of the cheese, ( optional).
- Bake for 20 minutes or until bubbly.
