1 lb (450g) lean ground turkey or chicken 1 onion, chopped 1 bell pepper, chopped 1 can (15 oz) black beans, drained and rinsed 1 can (15 oz) kidney beans, drained and rinsed 1 can (15 oz) corn, drained 1 can (15 oz) diced tomatoes 1 packet of taco seasoning mix (look for a lower-sodium version if available) 1 packet of ranch dressing mix (look for a lower-sodium version if available) 4 cups (about 1 quart) low-sodium chicken or vegetable broth Optional toppings: shredded lettuce, low-fat shredded cheese, diced green onions, chopped cilantro, low-fat Greek yogurt or light sour cream, and lime wedges.

Instructions:

  1. In a large pot or Dutch oven, cook the ground turkey or chicken over medium heat until it’s no longer pink. Break it apart into crumbles as it cooks. Drain any excess fat.
  2. Add the chopped onion and bell pepper to the cooked meat and sauté for a few minutes until they start to soften.
  3. Stir in the taco seasoning mix and ranch dressing mix.
  4. Add the drained black beans, kidney beans, corn, diced tomatoes, and chicken or vegetable broth. Stir well to combine.
