Weight Watchers Taco Pizza

Ingredients:
For the Pizza Crust:
- 1 cup self-rising flour
- 1 cup non-fat Greek yogurt
For the Taco Pizza Toppings:
- 1/2 pound lean ground turkey or chicken
- 1 packet taco seasoning (choose a lower-point option for Weight Watchers)
- 1/2 cup black beans, drained and rinsed
- 1/2 cup diced tomatoes
- 1/2 cup diced bell peppers
- 1/4 cup sliced black olives
- 1 cup shredded reduced-fat cheddar cheese
- Fresh cilantro, chopped (for garnish)
- Non-fat Greek yogurt or salsa (optional, for serving)
Instructions:
- Preheat your oven to 425°F (220°C).
- In a bowl, combine the self-rising flour and non-fat Greek yogurt. Mix until a dough forms.
- Turn the dough out onto a lightly floured surface and knead for a few minutes until it’s smooth.
- Roll out the dough into your desired pizza shape and thickness.
- Transfer the pizza crust to a pizza stone or a baking sheet lined with parchment paper.
- In a skillet over medium heat, cook the ground turkey or chicken until browned. Drain any excess fat.
- Add the taco seasoning and water (as per the packet instructions) to the cooked meat. Simmer until the mixture thickens.
- Spread the taco-seasoned meat over the pizza crust.
- Sprinkle black beans, diced tomatoes, diced bell peppers, sliced black olives, and shredded cheddar cheese evenly over the pizza.
- Bake in the preheated oven for 12-15 minutes or until the crust is golden and the cheese is melted and bubbly.
- Remove from the oven and let the taco pizza cool for a few minutes.
- Garnish with fresh cilantro and serve with non-fat Greek yogurt or salsa if desired
