Weight Watchers Taco Pizza

Ingredients:

For the Pizza Crust:

  • 1 cup self-rising flour
  • 1 cup non-fat Greek yogurt

For the Taco Pizza Toppings:

  • 1/2 pound lean ground turkey or chicken
  • 1 packet taco seasoning (choose a lower-point option for Weight Watchers)
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup diced tomatoes
  • 1/2 cup diced bell peppers
  • 1/4 cup sliced black olives
  • 1 cup shredded reduced-fat cheddar cheese
  • Fresh cilantro, chopped (for garnish)
  • Non-fat Greek yogurt or salsa (optional, for serving)

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, combine the self-rising flour and non-fat Greek yogurt. Mix until a dough forms.
  3. Turn the dough out onto a lightly floured surface and knead for a few minutes until it’s smooth.
  4. Roll out the dough into your desired pizza shape and thickness.
  5. Transfer the pizza crust to a pizza stone or a baking sheet lined with parchment paper.
  6. In a skillet over medium heat, cook the ground turkey or chicken until browned. Drain any excess fat.
  7. Add the taco seasoning and water (as per the packet instructions) to the cooked meat. Simmer until the mixture thickens.
  8. Spread the taco-seasoned meat over the pizza crust.
  9. Sprinkle black beans, diced tomatoes, diced bell peppers, sliced black olives, and shredded cheddar cheese evenly over the pizza.
  10. Bake in the preheated oven for 12-15 minutes or until the crust is golden and the cheese is melted and bubbly.
  11. Remove from the oven and let the taco pizza cool for a few minutes.
  12. Garnish with fresh cilantro and serve with non-fat Greek yogurt or salsa if desired
