Weight Watchers Taco Casserole
Ingredients:
- 1 lb lean ground turkey or chicken
- 1 small onion, finely chopped
- 1 bell pepper, diced
- 1 packet (1 oz) reduced-sodium taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup frozen corn kernels
- 1 cup salsa (choose a lower-sugar option)
- 1 cup reduced-fat shredded cheddar cheese
- 4 whole wheat or corn tortillas
- Fresh cilantro, chopped (for garnish)
- Non-fat Greek yogurt (optional, for serving)
Instructions:
1. Preheat the Oven:
- Preheat your oven to 375°F (190°C).
2. Cook the Meat and Vegetables:
- In a large skillet, cook the ground turkey or chicken over medium heat until browned.
- Add the chopped onion and bell pepper to the skillet and cook until the vegetables are softened.
3. Add Taco Seasoning:
- Sprinkle the taco seasoning over the meat and vegetables. Stir to combine.
4. Combine Beans and Corn:
- Add the black beans and frozen corn to the skillet. Mix well.
5. Layer the Casserole:
- In a baking dish, layer two tortillas at the bottom.
- Spoon half of the meat and vegetable mixture over the tortillas.
- Spread half of the salsa over the meat mixture.
- Sprinkle half of the shredded cheese over the salsa.
6. Repeat the Layers:
- Repeat the layering process with the remaining tortillas, meat mixture, salsa, and shredded cheese.
7. Bake:
- Bake in the preheated oven for about 20-25 minutes or until the cheese is melted and bubbly.
8. Garnish and Serve:
- Remove from the oven and let it cool for a few minutes.
- Garnish with chopped cilantro and serve with a dollop of non-fat Greek yogurt if desired.
