Weight Watchers Taco Casserole

Ingredients:

  • 1 lb lean ground turkey or chicken
  • 1 small onion, finely chopped
  • 1 bell pepper, diced
  • 1 packet (1 oz) reduced-sodium taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 1 cup salsa (choose a lower-sugar option)
  • 1 cup reduced-fat shredded cheddar cheese
  • 4 whole wheat or corn tortillas
  • Fresh cilantro, chopped (for garnish)
  • Non-fat Greek yogurt (optional, for serving)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 375°F (190°C).

2. Cook the Meat and Vegetables:

  • In a large skillet, cook the ground turkey or chicken over medium heat until browned.
  • Add the chopped onion and bell pepper to the skillet and cook until the vegetables are softened.

3. Add Taco Seasoning:

  • Sprinkle the taco seasoning over the meat and vegetables. Stir to combine.

4. Combine Beans and Corn:

  • Add the black beans and frozen corn to the skillet. Mix well.

5. Layer the Casserole:

  • In a baking dish, layer two tortillas at the bottom.
  • Spoon half of the meat and vegetable mixture over the tortillas.
  • Spread half of the salsa over the meat mixture.
  • Sprinkle half of the shredded cheese over the salsa.

6. Repeat the Layers:

  • Repeat the layering process with the remaining tortillas, meat mixture, salsa, and shredded cheese.

7. Bake:

  • Bake in the preheated oven for about 20-25 minutes or until the cheese is melted and bubbly.

8. Garnish and Serve:

  • Remove from the oven and let it cool for a few minutes.
  • Garnish with chopped cilantro and serve with a dollop of non-fat Greek yogurt if desired.
