Ingredients:

  • 1/2 cup fat-free refried beans

  • 1/2 cup reduced-fat Mexican cheese blend
  • 1/4 cup salsa
  • 1/4 cup diced tomatoes

  • 2 tbsp sliced black olives (optional)
  • 1/4 cup chopped green onions

  • Taco seasoning (to taste)

Instructions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C).

  4. Layer the Pizza: Spread half of the refried beans on one tortilla. Top with the cooked meat mixture. Place the second tortilla on top.
  5. Top the Pizza: Spread the salsa over the top tortilla. Sprinkle the reduced-fat cheese blend evenly over the salsa. Add diced tomatoes, onions, and black olives if using.
  6. Bake: Place the assembled pizza back in the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  7. Finish and Serve: Remove from the oven and sprinkle with chopped green onions. Slice into quarters and serve with optional toppings like shredded lettuce, fat-free sour cream, and diced jalapeños.
