Weight Watchers Skinny Banana Bread or Muffins – 2 point.

Ingredients:
- 2 ripe bananas, mashed
- 1 large egg
- 1/4 cup unsweetened applesauce
- 1/4 cup fat-free Greek yogurt
- 1/2 tsp vanilla extract
- 1 cup whole wheat flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp cinnamon (optional)
- Pinch of salt
- 2 tbsp stevia or sweetener of choice (adjust to taste)
- 1/4 cup chopped walnuts (optional)
Instructions:
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line a muffin tin with paper liners.
- Mash the bananas in a large bowl until smooth.
- Mix wet ingredients: Add the egg, applesauce, Greek yogurt, and vanilla extract to the mashed bananas. Stir to combine.
- Add dry ingredients: In a separate bowl, whisk together the whole wheat flour, baking soda, baking powder, cinnamon, salt, and sweetener.
- Combine: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in walnuts if using.
- Pour the batter into the prepared loaf pan or muffin tin.
- For muffins: Fill each muffin cup about 3/4 full.
- Bake in the preheated oven:
- For muffins, bake for 15-20 minutes, or until a toothpick inserted comes out clean.
- For banana bread, bake for 30-40 minutes, checking with a toothpick in the center.
- Cool for a few minutes before removing from the pan. Allow to cool completely before slicing or serving.
