Weight Watchers Skinny Banana Bread or Muffins – 2 point.

Ingredients:

  • 2 ripe bananas, mashed
  • 1 large egg
  • 1/4 cup unsweetened applesauce
  • 1/4 cup fat-free Greek yogurt
  • 1/2 tsp vanilla extract
  • 1 cup whole wheat flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon (optional)
  • Pinch of salt
  • 2 tbsp stevia or sweetener of choice (adjust to taste)
  • 1/4 cup chopped walnuts (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line a muffin tin with paper liners.
  2. Mash the bananas in a large bowl until smooth.
  3. Mix wet ingredients: Add the egg, applesauce, Greek yogurt, and vanilla extract to the mashed bananas. Stir to combine.
  4. Add dry ingredients: In a separate bowl, whisk together the whole wheat flour, baking soda, baking powder, cinnamon, salt, and sweetener.
  5. Combine: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in walnuts if using.
  6. Pour the batter into the prepared loaf pan or muffin tin.
    • For muffins: Fill each muffin cup about 3/4 full.
  7. Bake in the preheated oven:
    • For muffins, bake for 15-20 minutes, or until a toothpick inserted comes out clean.
    • For banana bread, bake for 30-40 minutes, checking with a toothpick in the center.
  8. Cool for a few minutes before removing from the pan. Allow to cool completely before slicing or serving.
