Weight Watchers seafood salad
Ingredients:
- 1 lb cooked shrimp, peeled and deveined
- 1 cup lump crab meat
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/2 cup celery, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh lemon juice
- 1 tablespoon olive oil
- 1 tablespoon light mayonnaise
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- Mixed greens or lettuce for serving
Instructions:
- Prepare the Shrimp and Crab:
- If the shrimp is not pre-cooked, cook it in boiling water for 2-3 minutes until pink and opaque. Drain and let cool.
- Drain any excess liquid from the crab meat.
- Combine the Salad Ingredients:
- In a large bowl, combine the cooked shrimp, lump crab meat, cherry tomatoes, cucumber, celery, red onion, and parsley.
- Make the Dressing:
- In a small bowl, whisk together the lemon juice, olive oil, light mayonnaise, Dijon mustard, salt, and pepper until well combined.
- Mix the Salad:
- Pour the dressing over the seafood mixture and gently toss to coat all the ingredients evenly.
- Serve:
- Serve the seafood salad over a bed of mixed greens or lettuce.
- Optional:
- Garnish with additional lemon wedges and fresh parsley.
Tips:
- This salad can be served immediately, but it also tastes great after chilling in the refrigerator for an hour to let the flavors meld.
- Adjust the seasoning to your taste, adding more lemon juice, salt, or pepper as desired.
