Weight Watchers seafood salad

Ingredients:

  • 1 lb cooked shrimp, peeled and deveined
  • 1 cup lump crab meat
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/2 cup celery, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • 1 tablespoon light mayonnaise
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Mixed greens or lettuce for serving

Instructions:

  1. Prepare the Shrimp and Crab:
    • If the shrimp is not pre-cooked, cook it in boiling water for 2-3 minutes until pink and opaque. Drain and let cool.
    • Drain any excess liquid from the crab meat.
  2. Combine the Salad Ingredients:
    • In a large bowl, combine the cooked shrimp, lump crab meat, cherry tomatoes, cucumber, celery, red onion, and parsley.
  3. Make the Dressing:
    • In a small bowl, whisk together the lemon juice, olive oil, light mayonnaise, Dijon mustard, salt, and pepper until well combined.
  4. Mix the Salad:
    • Pour the dressing over the seafood mixture and gently toss to coat all the ingredients evenly.
  5. Serve:
    • Serve the seafood salad over a bed of mixed greens or lettuce.
  6. Optional:
    • Garnish with additional lemon wedges and fresh parsley.

Tips:

  • This salad can be served immediately, but it also tastes great after chilling in the refrigerator for an hour to let the flavors meld.
  • Adjust the seasoning to your taste, adding more lemon juice, salt, or pepper as desired.
