Weight Watchers Parmesan Baked Pork Chops

Ingredients:

  • 4 boneless pork chops (about 1 1/2 lbs)
  • 1 cup whole wheat breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 large eggs, beaten

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a shallow dish, combine whole wheat breadcrumbs, grated Parmesan cheese, dried oregano, dried basil, garlic powder, salt, and pepper. Mix well.
  3. Dip each pork chop into the beaten eggs, ensuring it’s well-coated.
  4. Press the egg-coated pork chops into the breadcrumb mixture, making sure both sides are covered evenly.
  5. Place the coated pork chops on the prepared baking sheet.
  6. Bake in the preheated oven for about 20-25 minutes or until the internal temperature reaches 145°F (63°C) and the coating is golden brown and crispy.
  7. Remove from the oven and let the pork chops rest for a few minutes before serving.
