Weight Watchers Mediterranean Salad Recipe

Ingredients

  • 2 large tomatoes, diced
  • 1 cucumber, diced
  • 1/2 red onion, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 3 tbsp olive oil
  • 1 lemon, juiced
  • a pinch of salt and pepper
  • cilantro, parsley, mint to mix into the dressing

Instructions

Directions:

  1. Place all the salad ingredients into 1 large bowl and set aside
  2. In a small mixing bowl, combine your olive oil, lemon juice, salt and pepper, and your herbs and mix until combined
  3. Pour the olive oil dressing onto the salad ingredients and mix until combined.

Notes

4 Servings total 

Each serving is 1/2 to 1/4 cup depending on the size of your chopped veggies. You can bulk this recipe up with fresh herbs for more bright summer flavors!
