Weight Watchers Mediterranean Salad Recipe
Ingredients
- 2 large tomatoes, diced
- 1 cucumber, diced
- 1/2 red onion, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 3 tbsp olive oil
- 1 lemon, juiced
- a pinch of salt and pepper
- cilantro, parsley, mint to mix into the dressing
Instructions
Directions:
- Place all the salad ingredients into 1 large bowl and set aside
- In a small mixing bowl, combine your olive oil, lemon juice, salt and pepper, and your herbs and mix until combined
- Pour the olive oil dressing onto the salad ingredients and mix until combined.
Notes
4 Servings total
Each serving is 1/2 to 1/4 cup depending on the size of your chopped veggies. You can bulk this recipe up with fresh herbs for more bright summer flavors!
