Instructions:
Preheat your oven to 350°F (175°C). Prepare a loaf pan by lightly greasing it with cooking spray.
In a mixing bowl, combine the eggs, softened cream cheese, and baking powder.
If desired, add a sweetener of your choice, such as stevia or erythritol, to taste. You can also add a splash of vanilla extract or a sprinkle of cinnamon for flavor variation.
Mix all the ingredients together until well combined and smooth.
Pour the mixture into the prepared loaf pan.
Bake in the preheated oven for about 25-30 minutes or until the loaf is set and lightly golden on top. You can check for doneness by inserting a toothpick into the center; if it comes out clean, it’s ready.
Once done, remove the egg loaf from the oven and let it cool for a few minutes before slicing.
