Weight Watchers Lemon Muffins Recipe (1 Point Plus or 2 Points)

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar substitute (like Stevia or Erythritol)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup plain non-fat Greek yogurt
  • 1 large egg
  • Zest of one lemon
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. Mix Dry Ingredients: In a bowl, whisk together the flour, sugar substitute, baking powder, baking soda, and salt.
  3. Combine Wet Ingredients: In another bowl, mix together the applesauce, Greek yogurt, egg, lemon zest, lemon juice, and vanilla extract.
  4. Combine Mixtures: Add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.
  5. Distribute Batter: Depending on your preference for muffin sizes and points, distribute the batter among the muffin cups. You can make 12 smaller muffins for 1 Point Plus each or 6 larger muffins for 2 Points each.
  6. Bake: Bake in the preheated oven for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool: Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Weight Watchers Points: The points will depend on the specific ingredients and quantities you use. Adjust the sugar substitute and consider using non-fat Greek yogurt to keep the points lower.
