Weight Watchers Lemon Muffins Recipe (1 Point Plus or 2 Points)

Ingredients:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar substitute (like Stevia or Erythritol)

- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsweetened applesauce
- 1/4 cup plain non-fat Greek yogurt
- 1 large egg
- Zest of one lemon
- 2 tablespoons lemon juice
- 1 teaspoon vanilla extract
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
- Mix Dry Ingredients: In a bowl, whisk together the flour, sugar substitute, baking powder, baking soda, and salt.
- Combine Wet Ingredients: In another bowl, mix together the applesauce, Greek yogurt, egg, lemon zest, lemon juice, and vanilla extract.
- Combine Mixtures: Add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.
- Distribute Batter: Depending on your preference for muffin sizes and points, distribute the batter among the muffin cups. You can make 12 smaller muffins for 1 Point Plus each or 6 larger muffins for 2 Points each.
- Bake: Bake in the preheated oven for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
