Weight Watchers HOMEMADE Cranberry Orange Bread
Ingredients
- 1 cup fresh or frozen cranberries, halved
- 1 medium orange, zest and juice
- 1/2 cup unsweetened applesauce
- 1/2 cup granulated sugar substitute (e.g., Stevia, Splenda)
- 1/4 cup low-fat buttermilk
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a medium bowl, combine the cranberries and orange zest. Set aside.
- In a large bowl, whisk together the applesauce, sugar substitute, buttermilk, egg, vanilla extract, and the juice from the orange.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.
- Fold in the cranberries and orange zest mixture.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

- For added flavor, you can sprinkle a bit of additional orange zest on top of the loaf before baking.
