Weight Watchers HOMEMADE Cranberry Orange Bread

Ingredients

  • 1 cup fresh or frozen cranberries, halved
  • 1 medium orange, zest and juice
  • 1/2 cup unsweetened applesauce
  • 1/2 cup granulated sugar substitute (e.g., Stevia, Splenda)
  • 1/4 cup low-fat buttermilk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a medium bowl, combine the cranberries and orange zest. Set aside.
  3. In a large bowl, whisk together the applesauce, sugar substitute, buttermilk, egg, vanilla extract, and the juice from the orange.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.
  6. Fold in the cranberries and orange zest mixture.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Tips

  • For added flavor, you can sprinkle a bit of additional orange zest on top of the loaf before baking.
  • This bread can be stored in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
  • Serve slices with a bit of light cream cheese or a drizzle of honey for an extra treat.
