weight watcher’s frozen peanut butter cups

Ingredients:

  • 1/2 cup natural peanut butter (unsweetened)
  • 1/4 cup powdered sugar substitute (such as Stevia or Swerve)
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 cup unsweetened almond milk (or any milk of your choice)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Mini muffin liners

Instructions:

  1. Mix Peanut Butter Filling:
    • In a bowl, combine the natural peanut butter, powdered sugar substitute, cocoa powder, almond milk, vanilla extract, and a pinch of salt. Mix until well combined.
  2. Line Mini Muffin Tray:
    • Line a mini muffin tray with mini muffin liners.
  3. Fill Muffin Cups:
    • Spoon a small amount of the peanut butter mixture into each muffin cup, filling them about halfway.
  4. Freeze First Layer:
    • Place the muffin tray in the freezer and let the first layer freeze for about 15-20 minutes.
  5. Add Second Layer:
    • Once the first layer is slightly set, spoon another layer of the peanut butter mixture on top of the frozen layer.
  6. Freeze Completely:
    • Return the muffin tray to the freezer and let the peanut butter cups freeze completely for at least 2-3 hours, or until firm.
  7. Serve and Enjoy:
    • Once frozen, remove the peanut butter cups from the muffin tray.
    • Peel off the liners and serve.
