weight watcher’s frozen peanut butter cups
Ingredients:
- 1/2 cup natural peanut butter (unsweetened)
- 1/4 cup powdered sugar substitute (such as Stevia or Swerve)
- 2 tablespoons unsweetened cocoa powder
- 1/4 cup unsweetened almond milk (or any milk of your choice)
- 1 teaspoon vanilla extract
- Pinch of salt
- Mini muffin liners
Instructions:
- Mix Peanut Butter Filling:
- In a bowl, combine the natural peanut butter, powdered sugar substitute, cocoa powder, almond milk, vanilla extract, and a pinch of salt. Mix until well combined.
- Line Mini Muffin Tray:
- Line a mini muffin tray with mini muffin liners.
- Fill Muffin Cups:
- Spoon a small amount of the peanut butter mixture into each muffin cup, filling them about halfway.
- Freeze First Layer:
- Place the muffin tray in the freezer and let the first layer freeze for about 15-20 minutes.
- Add Second Layer:
- Once the first layer is slightly set, spoon another layer of the peanut butter mixture on top of the frozen layer.
- Freeze Completely:
- Return the muffin tray to the freezer and let the peanut butter cups freeze completely for at least 2-3 hours, or until firm.
- Serve and Enjoy:
- Once frozen, remove the peanut butter cups from the muffin tray.
- Peel off the liners and serve.
