Weight watchers farmers casserole

Ingredients:

  • 2 cups frozen shredded hash browns, thawed
  • 1 cup diced lean ham (Canadian bacon or turkey bacon can be used as a substitute)
  • 1 cup diced bell peppers (mix of colors for variety)
  • 1 cup diced onions
  • 1 cup reduced-fat shredded cheddar cheese
  • 1 cup fat-free milk
  • 4 large eggs
  • Salt and pepper to taste
  • Cooking spray

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the thawed hash browns, diced ham, bell peppers, onions, and half of the shredded cheddar cheese. Mix well.
  3. In a separate bowl, whisk together the eggs and milk. Season with salt and pepper to taste.
  4. Pour the egg mixture over the hash brown mixture and stir until everything is evenly combined.
  5. Coat a baking dish with cooking spray. Transfer the mixture into the baking dish, spreading it out evenly.
  6. Sprinkle the remaining shredded cheddar cheese over the top.
  7. Bake in the preheated oven for about 35-40 minutes or until the casserole is set in the center and the top is golden brown.
  8. Allow the casserole to cool for a few minutes before slicing.
  9. Serve warm and enjoy!
