Weight Watchers Chocolate & Cherry Swiss Rolls

Ingredients:

For the Chocolate Swiss Roll:

  • 4 large eggs
  • 1/2 cup granulated sugar
  • 1/3 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

For the Filling:

  • 1 cup non-fat Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen cherries, pitted and chopped
  • 2 tablespoons powdered sugar (optional, for sweetness)

For Garnish (optional):

  • Dark chocolate shavings
  • Fresh cherries

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Make the Chocolate Swiss Roll:
    • In a large bowl, beat the eggs and sugar together until light and fluffy. This may take about 5-7 minutes.
    • In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt.
    • Gently fold the dry ingredients into the egg mixture until just combined.
    • Pour the batter onto the prepared baking sheet and spread it evenly.
  3. Bake:
    • Bake in the preheated oven for 12-15 minutes or until the cake is set and springs back when touched.
  4. Prepare Filling:
    • While the cake is baking, mix the Greek yogurt and vanilla extract in a bowl. If desired, add powdered sugar for sweetness.
    • Fold in the chopped cherries.
  5. Roll the Cake:
    • Once the cake is done, transfer it onto a clean kitchen towel dusted with cocoa powder.
    • Roll the cake (with the towel) from the short end and let it cool completely.
  6. Fill the Swiss Roll:
    • Carefully unroll the cake and spread the yogurt and cherry filling evenly over the cake.
    • Roll the cake back up, this time without the towel.
  7. Chill:
    • Place the rolled cake in the refrigerator for at least 1-2 hours to set.
  8. Garnish (Optional):
    • Before serving, you can garnish the Swiss Roll with dark chocolate shavings and fresh cherries if desired.
