Weight Watchers Chocolate & Cherry Swiss Rolls

Ingredients:
For the Chocolate Swiss Roll:
- 4 large eggs
- 1/2 cup granulated sugar
- 1/3 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
For the Filling:
- 1 cup non-fat Greek yogurt
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen cherries, pitted and chopped
- 2 tablespoons powdered sugar (optional, for sweetness)
For Garnish (optional):
- Dark chocolate shavings
- Fresh cherries
Instructions:
- Preheat Oven:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Make the Chocolate Swiss Roll:
- In a large bowl, beat the eggs and sugar together until light and fluffy. This may take about 5-7 minutes.
- In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt.
- Gently fold the dry ingredients into the egg mixture until just combined.
- Pour the batter onto the prepared baking sheet and spread it evenly.
- Bake:
- Bake in the preheated oven for 12-15 minutes or until the cake is set and springs back when touched.
- Prepare Filling:
- While the cake is baking, mix the Greek yogurt and vanilla extract in a bowl. If desired, add powdered sugar for sweetness.
- Fold in the chopped cherries.
- Roll the Cake:
- Once the cake is done, transfer it onto a clean kitchen towel dusted with cocoa powder.
- Roll the cake (with the towel) from the short end and let it cool completely.
- Fill the Swiss Roll:
- Carefully unroll the cake and spread the yogurt and cherry filling evenly over the cake.
- Roll the cake back up, this time without the towel.
- Chill:
- Place the rolled cake in the refrigerator for at least 1-2 hours to set.
- Garnish (Optional):
- Before serving, you can garnish the Swiss Roll with dark chocolate shavings and fresh cherries if desired.
