Weight Watchers Cheesy Texas Toast
Ingredients:
- 4 slices of whole grain or whole wheat bread (choose a lower-point option)
- 1/4 cup reduced-fat shredded cheddar cheese
- 1/4 cup reduced-fat shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped (optional)
- 1 tablespoon reduced-fat butter or a butter substitute
- Cooking spray
- Salt and black pepper to taste
Instructions:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil and lightly grease it with cooking spray.
- In a small mixing bowl, combine the reduced-fat cheddar cheese, reduced-fat mozzarella cheese, grated Parmesan cheese, minced garlic, and fresh parsley (if using).
- Spread the reduced-fat butter or butter substitute on one side of each slice of bread.
- Sprinkle the cheese and garlic mixture evenly over the buttered side of the bread slices.
- Season with a pinch of salt and a dash of black pepper to taste.
- Place the prepared bread slices on the baking sheet, cheese-side up.
- Bake in the preheated oven for about 10-12 minutes or until the cheese is melted and bubbly, and the bread is toasted to your liking.
- Remove from the oven and let cool for a few minutes before serving.
