Weight Watchers Cheesy Texas Toast

Ingredients:

  • 4 slices of whole grain or whole wheat bread (choose a lower-point option)
  • 1/4 cup reduced-fat shredded cheddar cheese
  • 1/4 cup reduced-fat shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped (optional)
  • 1 tablespoon reduced-fat butter or a butter substitute
  • Cooking spray
  • Salt and black pepper to taste

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil and lightly grease it with cooking spray.
  2. In a small mixing bowl, combine the reduced-fat cheddar cheese, reduced-fat mozzarella cheese, grated Parmesan cheese, minced garlic, and fresh parsley (if using).
  3. Spread the reduced-fat butter or butter substitute on one side of each slice of bread.
  4. Sprinkle the cheese and garlic mixture evenly over the buttered side of the bread slices.
  5. Season with a pinch of salt and a dash of black pepper to taste.
  6. Place the prepared bread slices on the baking sheet, cheese-side up.
  7. Bake in the preheated oven for about 10-12 minutes or until the cheese is melted and bubbly, and the bread is toasted to your liking.
  8. Remove from the oven and let cool for a few minutes before serving.
