Weight Watchers California Spaghetti Salad
Ingredients:
- 8 oz whole wheat spaghetti (or a low-carb alternative)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup bell peppers (red, yellow, or orange), chopped
- 1/2 cup red onion, finely chopped
- 1/4 cup black olives, sliced
- 1/4 cup light Italian dressing (look for a reduced-fat or low-calorie option)
- 2 tablespoons fresh basil, chopped
- Salt and pepper to taste
- Optional: Grilled chicken breast (sliced) for added protein
Instructions:
- Cook the spaghetti according to package instructions. Once done, rinse it under cold water and drain well.
- In a large mixing bowl, combine the cooked and cooled spaghetti with the cherry tomatoes, cucumber, bell peppers, red onion, and black olives.
- Add the light Italian dressing to the mixture and toss until everything is evenly coated.
- Gently fold in the fresh basil. Season with salt and pepper according to taste.
- If desired, top the salad with grilled chicken breast slices for added protein.
- Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together.
