Weight Watchers California Spaghetti Salad

Ingredients:

  • 8 oz whole wheat spaghetti (or a low-carb alternative)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers (red, yellow, or orange), chopped
  • 1/2 cup red onion, finely chopped
  • 1/4 cup black olives, sliced
  • 1/4 cup light Italian dressing (look for a reduced-fat or low-calorie option)
  • 2 tablespoons fresh basil, chopped
  • Salt and pepper to taste
  • Optional: Grilled chicken breast (sliced) for added protein

Instructions:

  1. Cook the spaghetti according to package instructions. Once done, rinse it under cold water and drain well.
  2. In a large mixing bowl, combine the cooked and cooled spaghetti with the cherry tomatoes, cucumber, bell peppers, red onion, and black olives.
  3. Add the light Italian dressing to the mixture and toss until everything is evenly coated.
  4. Gently fold in the fresh basil. Season with salt and pepper according to taste.
  5. If desired, top the salad with grilled chicken breast slices for added protein.
  6. Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together.
