WEIGHT WATCHERS CABBAGE SOUP
Ingredients
- 1/2 head of cabbage, chopped
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 2 carrots, sliced
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 3 cups chopped zucchini
- 2 cups sliced mushrooms
- 1 can (14.5 oz) diced tomatoes (no salt added if desired)
- 6 cups vegetable broth (or chicken broth if preferred)
- 1-2 teaspoons Italian seasoning (or to taste)
- 1/2 teaspoon crushed red pepper flakes (optional for a little spice)
- Salt and pepper to taste
- Fresh parsley, chopped (optional garnish)
Instructions
- In a large pot, sauté the onion and garlic over medium heat for 2-3 minutes until fragrant. You can use a small amount of oil or a splash of broth to prevent sticking.
- Add the carrots, green bell pepper, red bell pepper, zucchini, and mushrooms. Cook for an additional 5 minutes, stirring occasionally.
- Add the chopped cabbage, diced tomatoes, and vegetable broth. Stir to combine.
- Season with Italian seasoning, crushed red pepper flakes (if using), and salt and pepper.
- Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 20-30 minutes, or until the vegetables are tender.
- Taste and adjust seasoning as needed. Garnish with fresh parsley if desired.
