Weight Watchers Beef Noodle Soup

Ingredients:

  • 1 lb lean beef stew meat, trimmed and cut into bite-sized pieces
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 8 cups beef broth (low-sodium)
  • 1 cup water
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper, to taste
  • 2 cups cooked whole wheat egg noodles
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large pot, spray non-stick cooking spray and heat over medium-high heat. Add the beef and cook until browned on all sides.
  2. Add diced onions, sliced carrots, sliced celery, and minced garlic to the pot. Cook for a few minutes until the vegetables begin to soften.
  3. Pour in beef broth and water. Add the bay leaf, dried thyme, dried rosemary, salt, and black pepper. Bring the mixture to a boil.
  4. Reduce the heat to low, cover, and simmer for about 1 to 1.5 hours or until the beef is tender.
  5. While the soup is simmering, cook the whole wheat egg noodles according to package instructions. Drain and set aside.
  6. Once the beef is tender, discard the bay leaf. Adjust salt and pepper to taste.
  7. To serve, place a portion of cooked whole wheat egg noodles in each bowl and ladle the hot soup over the noodles.
  8. Garnish with chopped fresh parsley.
