Weight Watchers Beef Noodle Soup
Ingredients:
- 1 lb lean beef stew meat, trimmed and cut into bite-sized pieces
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 8 cups beef broth (low-sodium)
- 1 cup water
- 1 bay leaf
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and black pepper, to taste
- 2 cups cooked whole wheat egg noodles
- Fresh parsley, chopped (for garnish)
Instructions:
- In a large pot, spray non-stick cooking spray and heat over medium-high heat. Add the beef and cook until browned on all sides.
- Add diced onions, sliced carrots, sliced celery, and minced garlic to the pot. Cook for a few minutes until the vegetables begin to soften.
- Pour in beef broth and water. Add the bay leaf, dried thyme, dried rosemary, salt, and black pepper. Bring the mixture to a boil.
- Reduce the heat to low, cover, and simmer for about 1 to 1.5 hours or until the beef is tender.
- While the soup is simmering, cook the whole wheat egg noodles according to package instructions. Drain and set aside.
- Once the beef is tender, discard the bay leaf. Adjust salt and pepper to taste.
- To serve, place a portion of cooked whole wheat egg noodles in each bowl and ladle the hot soup over the noodles.
- Garnish with chopped fresh parsley.
