Weight Watchers Baked Oatmeal with Blueberries

Ingredients:

  • 1/3 cup old-fashioned oats
  • 1 smashed banana
  • 1 beaten egg
  • Handful of blueberries (about 1/4 cup)
  • 1/2 teaspoon baking powder (optional, for added fluffiness)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Optional: Cinnamon or nutmeg to taste (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a small baking dish or ramekin.
  2. In a mixing bowl, combine the old-fashioned oats, smashed banana, beaten egg, blueberries, baking powder (if using), vanilla extract, salt, and any optional spices.
  3. Mix the ingredients together until well combined.
  4. Pour the mixture into the prepared baking dish or ramekin.
  5. Bake in the preheated oven for about 25-30 minutes or until the top is set and lightly golden.
  6. Allow the baked oatmeal to cool for a few minutes before serving.
