Weight Watchers Bacon Ranch Pasta Salad with Peas

Ingredients:

  • 8 oz whole wheat or multigrain pasta
  • 1 cup frozen peas, thawed
  • 6 slices turkey bacon, cooked and crumbled
  • 1 cup cherry tomatoes, halved
  • 1/2 cup reduced-fat cheddar cheese, shredded
  • 1/4 cup red onion, finely chopped
  • 1/2 cup non-fat Greek yogurt
  • 2 tbsp light mayonnaise
  • 1 tbsp ranch seasoning mix
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. Cook the pasta according to package instructions. Drain and let it cool.
  2. In a large mixing bowl, combine the cooked pasta, thawed peas, crumbled turkey bacon, cherry tomatoes, shredded cheddar cheese, and chopped red onion.
  3. In a small bowl, mix together non-fat Greek yogurt, light mayonnaise, and ranch seasoning mix until well combined.
  4. Pour the dressing over the pasta mixture and toss until everything is evenly coated.
  5. Season with salt and pepper to taste.
  6. Garnish with fresh parsley if desired.
  7. Refrigerate for at least 1 hour before serving to allow the flavors to meld.
  8. Serve chilled and enjoy!
