Weight Watchers Bacon Ranch Pasta Salad with Peas
Ingredients:
- 8 oz whole wheat or multigrain pasta
- 1 cup frozen peas, thawed
- 6 slices turkey bacon, cooked and crumbled
- 1 cup cherry tomatoes, halved
- 1/2 cup reduced-fat cheddar cheese, shredded
- 1/4 cup red onion, finely chopped
- 1/2 cup non-fat Greek yogurt
- 2 tbsp light mayonnaise
- 1 tbsp ranch seasoning mix
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
- Cook the pasta according to package instructions. Drain and let it cool.
- In a large mixing bowl, combine the cooked pasta, thawed peas, crumbled turkey bacon, cherry tomatoes, shredded cheddar cheese, and chopped red onion.
- In a small bowl, mix together non-fat Greek yogurt, light mayonnaise, and ranch seasoning mix until well combined.
- Pour the dressing over the pasta mixture and toss until everything is evenly coated.
- Season with salt and pepper to taste.
- Garnish with fresh parsley if desired.
- Refrigerate for at least 1 hour before serving to allow the flavors to meld.
- Serve chilled and enjoy!
