Weight Watchers Apple Crisp
Ingredients:
For the Apple Filling:
- 4 cups sliced and peeled apples (about 4-5 medium-sized apples)
- 2 tablespoons granulated sugar substitute (adjust to taste)
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
For the Crumble Topping:
- 1/2 cup old-fashioned oats
- 1/4 cup all-purpose flour
- 2 tablespoons granulated sugar substitute
- 1/4 teaspoon salt
- 2 tablespoons unsalted butter or margarine, melted (or use a butter substitute for fewer points)
- 1/2 teaspoon vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the sliced apples, granulated sugar substitute, ground cinnamon, ground nutmeg, lemon juice, and vanilla extract. Toss to coat the apples evenly.
- Transfer the apple mixture to an 8×8-inch baking dish or a similar-sized ovenproof dish.
- In a separate bowl, mix the oats, all-purpose flour, granulated sugar substitute, and salt.
- Drizzle the melted butter or margarine (or butter substitute) and vanilla extract over the dry mixture. Stir until it forms a crumbly texture.
- Sprinkle the crumble topping evenly over the apples in the baking dish.
- Cover the dish with aluminum foil and bake in the preheated oven for 20-25 minutes.
- Remove the foil and continue baking for an additional 15-20 minutes or until the topping is golden brown, and the apples are tender.
- Let the apple crisp cool slightly before serving. You can serve it warm or at room temperature.
