Weight Watchers Amish Cinnamon Bread (Makes 2 Loaves):

Ingredients:
Batter:
- 1 cup light butter, softened
- 2 cups sugar substitute (e.g., Stevia or other preferred sugar substitute)
- 2 eggs
- 2 cups buttermilk or homemade buttermilk (2 cups skim milk + 2 tablespoons vinegar or lemon juice)
- 4 cups all-purpose flour
- 2 teaspoons baking soda
Cinnamon/Sugar Mixture:
- 2/3 cups sugar substitute
- 2 teaspoons ground cinnamon
Directions:
- Preheat your oven to 350 degrees F (175 degrees C). Grease two loaf pans.
- In a large mixing bowl, cream together the light butter and sugar substitute. Add the eggs and mix well.
- Add buttermilk, flour, and baking soda to the butter mixture. Mix until well combined.
- Divide 1/2 of the batter (or a little less) evenly between the two greased loaf pans.
- In a separate bowl, mix 2/3 cups of sugar substitute with ground cinnamon. Sprinkle 3/4 of the cinnamon mixture on top of the batter in each pan.
- Add the remaining batter to each pan and sprinkle with the last of the cinnamon topping. Swirl the batter with a knife.
- Bake at 350 degrees F for 45-50 minutes or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 20 minutes before removing from the pan.
