watchers friendly CHEESY CHICKEN FRITTERS

Ingredients:
- 1.5 lb (700g) skinless, boneless chicken breast
- 2 medium eggs
- 1/3 cup (40g) whole wheat flour (or almond flour if you prefer)
- 1 cup (110g) reduced-fat shredded mozzarella cheese
- 2 Tbsp fresh basil, finely chopped
- 2 Tbsp chives, chopped
- 2 Tbsp parsley, chopped
- 1/2 tsp garlic powder
- A pinch of sea salt and fresh ground black pepper, to taste
- 1 Tbsp olive oil (or use a non-stick cooking spray)
Instructions:
- Cut the chicken breast into small pieces and place them in a food processor. Pulse until the chicken is finely ground.
- In a large mixing bowl, combine the ground chicken, eggs, whole wheat flour, reduced-fat mozzarella cheese, fresh basil, chives, parsley, garlic powder, sea salt, and black pepper. Mix everything together until well combined.
- Heat the olive oil in a large non-stick skillet over medium-high heat.
- Scoop the chicken mixture using a spoon and form it into small fritters or patties. Place them in the skillet and cook for about 3-4 minutes on each side, or until they are cooked through and have a golden brown crust. You may need to cook them in batches.
- Transfer the cooked fritters to a plate lined with paper towels to remove any excess oil.
- Serve your Cheesy Chicken Fritters with your favorite Weight Watchers-friendly dipping sauce or a side salad.
This recipe has been modified to make it more Weight Watchers-friendly by using whole wheat flour and reduced-fat cheese.
