Vegan Zucchini Patties:

Ingredients:

  • 2 medium zucchinis, grated
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs (ensure they’re vegan)
  • 1/4 cup nutritional yeast (optional, for flavor)
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • Juice of 1 lemon
  • 1/4 cup aquafaba (liquid from a can of chickpeas) or other egg replacer
  • Olive oil, for cooking

Instructions:

  1. Start by grating the zucchinis. You can either use a grater or a food processor. Once grated, place the zucchini in a colander, sprinkle with a little salt, and let it sit for about 10 minutes. This will help remove excess moisture from the zucchini.
  2. While the zucchini is draining, heat a small amount of olive oil in a pan over medium heat. Add the chopped onion and garlic and sauté until they’re translucent and fragrant. Set aside to cool.
  3. In a large mixing bowl, combine the grated and drained zucchini, sautéed onion and garlic, breadcrumbs, nutritional yeast (if using), chopped parsley, dried oregano, salt, black pepper, and red pepper flakes.
