Vegan Zucchini fritters
These fritters are crispy on the outside and soft on the inside. They are made with grated zucchini, carrot, and onion, flour, water, salt, pepper, and spices. They are cooked in vegetable oil until golden and brown. You can serve them with vegan sour cream, ketchup, or any sauce of your choice.
Ingredients:
2 zucchini
2 carrots
1 onion
Salt, pepper and spices to taste
4 tablespoons of flour
1/4 cup of water
Directions:
Grate the zucchini, carrots and onion, then squeeze out the excess water with a cheesecloth or a paper towel. Transfer the grated veggies to a large bowl. Add salt, pepper, flour and water, and mix well to form a thick batter. If the batter is too dry, add more water; if it is too wet, add more flour. Heat some oil in a large skillet over medium-high heat. Drop about 1/4 cup of batter per fritter into the hot oil, and flatten them slightly with a spatula. Cook for about 3 minutes per side, or until golden and crisp. Drain on paper towels and keep warm in the oven until ready to serve.
