Vegan Strawberry Mousse
Ingredients
- 2 cups fresh strawberries (hulled and sliced)
- 1/2 cup coconut cream (chilled)
- 3 tbsp maple syrup (or sweetener of choice)
- 1 tsp vanilla extract
- 1/2 tsp lemon juice (optional, enhances flavor)
- 1/2 tsp agar-agar powder (for a firmer texture)
Instructions
- Blend Strawberries: In a blender, puree the strawberries until smooth. Strain if you want a smoother texture.
- Heat & Thicken: In a saucepan, combine the strawberry puree, maple syrup, vanilla, and agar-agar. Heat over medium-low, stirring frequently until it simmers. Let it cook for 2 minutes to activate the agar. Remove from heat and let cool slightly.
- Whip Coconut Cream: In a chilled bowl, whisk the coconut cream until light and fluffy.
- Fold & Chill: Gently fold the strawberry mixture into the whipped coconut cream until well combined. Pour into serving glasses.
- Set & Serve: Refrigerate for at least 2 hours (or until set). Garnish with fresh strawberries or mint before serving.
