VEGAN SPINACH VEGAN EGG QUICHE


Ingredients:
1 vegan pie crust
1 package of firm tofu
1 tbsp olive oil
1/2 onion, diced
3 cloves garlic, minced
2 cups fresh spinach
1/2 cup nutritional yeast
1 tsp turmeric
1 tsp smoked paprika
Salt and pepper to taste
Instructions:
Preheat your oven to 375°F (190°C).
In a large skillet, heat olive oil over medium heat. Add the diced onion and garlic and sauté until translucent.
Add the spinach and sauté until wilted.
Drain the tofu and press out any excess water with a paper towel. Crumble the tofu into a bowl and mix in the nutritional yeast, turmeric, smoked paprika, salt, and pepper.
Add the sautéed spinach mixture to the tofu and mix well.
Pour the mixture into the pie crust and smooth out the top.
Bake for 35-40 minutes or until the top is golden brown.
Let the quiche cool for a few minutes before serving.
