Sourcing Quality Ingredients: At the heart of our recipe lies the humble lentil, a protein-packed legume celebrated for its versatility and health benefits. Sourced from trusted suppliers, our premium lentils are meticulously inspected to ensure optimal quality and freshness. Complemented by an array of vibrant vegetables—onions, garlic, carrots, celery, and red bell peppers—each component is carefully selected to elevate the soup’s texture and flavor profile.

Crafting Authentic Flavor: Infused with the essence of Spanish cuisine, our lentil soup embodies the rich tapestry of Mediterranean flavors. A harmonious blend of smoked paprika, ground cumin, and dried oregano imparts depth and complexity, invoking memories of sun-drenched Spanish kitchens and rustic, family gatherings. The addition of a fragrant bay leaf lends a subtle herbal note, while diced tomatoes contribute a touch of sweetness and acidity, rounding out the dish with balance and finesse.

Mastering the Cooking Process: Achieving perfection requires patience and precision. In a meticulously heated pot, our expert chefs artfully sauté diced onions, garlic, carrots, celery, and red bell peppers until tender, coaxing out their natural sweetness and aromas. With a sprinkle of spices and a generous pour of vegetable broth, the stage is set for the lentils to take center stage, simmering gently until they reach sublime tenderness.

Fine-Tuning for Palate Perfection: Taste is paramount in our culinary philosophy. As the soup simmers, our discerning chefs meticulously adjust the seasoning, adding salt and pepper to taste, ensuring each spoonful is a symphony of flavors. For those seeking a creamier consistency, a quick whirl with an immersion blender transforms the soup into a velvety masterpiece, while traditionalists may opt to leave the lentils intact, allowing their natural texture to shine through.

Presentation and Garnishing: A feast for the eyes as well as the palate, our vegan lentil soup is elegantly presented, adorned with a flourish of freshly chopped parsley—a verdant accent that adds brightness and visual appeal. Accompanied by lemon wedges on the side, diners are encouraged to squeeze a citrusy burst of freshness, further enhancing the soup’s depth of flavor and complexity.

Conclusion: Elevate your dining experience with our sumptuous vegan lentil soup, a culinary ode to the vibrant flavors of Spain. Crafted with care and attention to detail, each spoonful invites you on a journey of taste and texture, celebrating the beauty of plant-based cuisine and the rich heritage of Mediterranean cooking. Vegan Spanish-style lentil soup.

Ingredients:

  • 1 cup dry green or brown lentils, rinsed and drained
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 red bell pepper, diced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 4 cups vegetable broth
  • 1 (14.5 oz) can diced tomatoes
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (optional, for serving)

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add diced onion, garlic, carrots, celery, and red bell pepper. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes.
  2. Add smoked paprika, ground cumin, dried oregano, and bay leaf to the pot. Stir to coat the vegetables with the spices.
  3. Add the rinsed lentils, vegetable broth, and diced tomatoes (with their juices) to the pot. Stir well to combine.
  4. Bring the soup to a boil, then reduce the heat to low. Cover and simmer for about 25-30 minutes, or until the lentils are tender.
  5. Once the lentils are cooked, taste the soup and adjust the seasoning with salt and pepper as needed.
  6. Remove the bay leaf from the soup. If you prefer a thicker consistency, you can use an immersion blender to blend a portion of the soup, or simply mash some of the lentils with the back of a spoon.
  7. Serve the soup hot, garnished with freshly chopped parsley and lemon wedges on the side for squeezing over the soup.
