Vegan Pot roast

Ingredients:

2 tablespoon Vegan butter

1 cup onions

5 cloves garlic

1/3 cup liquid Amino

1 tablespoon Vegan Worcestershire sauce

1 teaspoon red pepper flakes

1 teaspoon cayenne pepper

1 teaspoon thyme

1 teaspoon Oregano

1 teaspoon sea salt

1 teaspoon onion powder

1 can of young jackfruit in water or brine

3 cups veggie stock+ 2 tablespoon cornstarch

5 small red potatoes

2 cups carrots

2 ribs of celery

2 cups of mushroom

Preparation:

Turn on oven at 350 degrees

Sautee onions & garlic in butter

Season with salt

Add Jack fruit

Add Worcestershire sauce & liquid Amino

Cook down. Add all spices

Mix cornstarch and veggie stock- add to Jackfruit mix. Cover and simmer for 15 min

In a baking pan, add quarter potatoes , celery & carrots

Add Jackfruit mix , mix . Cover and bake at 350 for 1hr 45 min.

Edit** thank you to all of those that tried the recipe – the feedback it’s on the spicy hot, if you don’t like heat cut the Cayenne & Chilli in half.
