Vegan Mushroom Stew

This vegan mushroom stew i recipe

Ingredients:

1 tbsp olive oil

1 onion, diced

3 cloves of garlic, minced

8 oz mushrooms, sliced

1 cup vegetable broth

1 cup coconut milk

1 tbsp soy sauce

1 tsp thyme

Salt and pepper, to taste

2 cups cooked quinoa or rice, for serving

Instructions:

Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté for 5-7 minutes until softened.

Add the minced garlic and sliced mushrooms and cook for an additional 5 minutes.

Pour in the vegetable broth, coconut milk, soy sauce, and thyme. Bring the mixture to a simmer and let cook for 10-15 minutes.

Season with salt and pepper to taste.

Serve the stew over a bed of cooked quinoa or rice. Enjoy!
