Vegan Mushroom patties

Ingredients:

  • 2 cups finely chopped mushrooms (any variety you like)
  • 1 cup cooked quinoa or brown rice
  • 1/2 cup breadcrumbs (use gluten-free if needed)
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon soy sauce or tamari
  • 1 tablespoon nutritional yeast (optional, but adds a cheesy flavor)
  • Salt and pepper to taste
  • 2-3 tablespoons olive oil for frying

Instructions:

  1. Prepare the Mushrooms: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped mushrooms and cook until they release their moisture and become tender, about 5-7 minutes. Remove from heat and let cool slightly.
  2. Mix the Ingredients: In a large mixing bowl, combine the cooked mushrooms, cooked quinoa or brown rice, breadcrumbs, chopped onion, minced garlic, chopped parsley, soy sauce or tamari, nutritional yeast (if using), salt, and pepper. Mix well until everything is evenly distributed.
  3. Form the Patties: Take about 1/4 cup of the mixture and form it into a patty shape using your hands. Repeat with the remaining mixture until you have formed all the patties.
  4. Cook the Patties: Heat the remaining olive oil in a skillet over medium heat. Once hot, add the patties to the skillet (you may need to do this in batches depending on the size of your skillet). Cook for 3-4 minutes on each side, or until golden brown and crispy.
  5. Serve: Once cooked, transfer the patties to a plate lined with paper towels to absorb any excess oil. Serve the mushroom patties hot with your favorite toppings and sauces. They’re great on burger buns with lettuce, tomato, avocado, and vegan mayo!
