Vegan Moussaka

INGRIDIENTS
1 onion – finely chopped
6-7 medium tomatoes – sliced
2 cloves of garlic -finely chopped
3 medium eggplants – peeled and sliced (1 cm ish)
For the “meat” I used Aldi’s no-meat vegan ground but i guess any vegan ground meat-like alternative works
Spices: salt, pepper, paprika, garlic powder, onion powder, thyme
First make the meat-like mixture with the onion, garlic, “meat” and spices on a pan – make sure the onion ia cooked and try for taste. Also make sure its pretty dry-tomatoes and eggplants will leave a lot of water.
Then peel and cut the eggplants and season them with salt and pepper and cook them in a slightly oily pan on both sides until soft.
Then assmeble like you would a lasagna – eggplant, “meat”, tomatoes and make sure u finish with tomatoes.
I baked at 200°C for 40 mins with a fan but this you have to see considering how much liquid you want inside.
(The potatoes are just boiled potatoes with salt)
Also fyi: this is just smth i figured out of my mum’s top of the head recipe. So its not perfect. Hope you enjoy though
