Vegan Magic Cookies

Indulge in the irresistible flavor of magic cookies while adhering to a vegan and keto-friendly lifestyle.

Ingredients:

  • 1 cup Almond flour
  • 1/4 cup Coconut flour
  • 1/3 cup Coconut oil, melted
  • 1/4 cup Almond butter
  • 1/4 cup Unsweetened shredded coconut
  • 1/4 cup Almond milk (unsweetened)
  • 1/3 cup Erythritol or preferred keto sweetener
  • 1 tsp Vanilla extract
  • 1/2 cup Sugar-free chocolate chips
  • 1/4 cup Chopped nuts (pecans or walnuts)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine almond flour, coconut flour, melted coconut oil, almond butter, shredded coconut, almond milk, erythritol, and vanilla extract. Mix until well combined.
  3. Fold in sugar-free chocolate chips and chopped nuts into the cookie dough.
  4. Using a cookie scoop or spoon, drop portions of the dough onto the prepared baking sheet, leaving space between each cookie.
  5. Flatten each cookie slightly with the back of a spoon or your fingers.
  6. Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
  7. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  8. Once cooled, enjoy these vegan keto magic cookies as a delightful and guilt-free treat!
