Vegan Magic Cookies
Indulge in the irresistible flavor of magic cookies while adhering to a vegan and keto-friendly lifestyle.
Ingredients:
- 1 cup Almond flour
- 1/4 cup Coconut flour
- 1/3 cup Coconut oil, melted
- 1/4 cup Almond butter
- 1/4 cup Unsweetened shredded coconut
- 1/4 cup Almond milk (unsweetened)
- 1/3 cup Erythritol or preferred keto sweetener
- 1 tsp Vanilla extract
- 1/2 cup Sugar-free chocolate chips
- 1/4 cup Chopped nuts (pecans or walnuts)
Instructions:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine almond flour, coconut flour, melted coconut oil, almond butter, shredded coconut, almond milk, erythritol, and vanilla extract. Mix until well combined.
- Fold in sugar-free chocolate chips and chopped nuts into the cookie dough.
- Using a cookie scoop or spoon, drop portions of the dough onto the prepared baking sheet, leaving space between each cookie.
- Flatten each cookie slightly with the back of a spoon or your fingers.
- Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
