Ingredients
For the Burger Patties (makes 2–3):
- 1 (15-ounce) can black beans, rinsed and drained
- 1/2 cup cooked quinoa or rolled oats
- 2 tablespoons ground flaxseed + 5 tablespoons water (flax egg)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon soy sauce or tamari
- 1 tablespoon tomato paste or ketchup
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon cumin
- Salt and black pepper, to taste
- Olive oil for cooking (optional)
For Assembly:
- Large sturdy lettuce leaves (such as iceberg, romaine, or butter lettuce)
- 2–3 slices vegan cheese (cheddar-style or American-style)
- Tomato slices
- Red onion slices
- Dill pickles or pickle chips
- Vegan mayo, mustard, or ketchup
- Avocado or guacamole (optional)
Instructions
1. Prepare the flax egg.
In a small bowl, mix ground flaxseed with water. Let sit for 5–10 minutes until thickened.
2. Make the burger patty mixture.
In a food processor or mixing bowl, combine the black beans, cooked quinoa or oats, chopped onion, garlic, soy sauce, tomato paste, spices, and flax egg. Pulse or mash until the mixture holds together but still has some texture. Form into 2–3 burger patties.
3. Cook the patties.
Heat a skillet over medium heat and lightly oil it if using. Cook the patties for 4–5 minutes on each side, or until golden brown and heated through. Add vegan cheese slices in the last minute of cooking so they melt slightly.
4. Prepare the lettuce buns.
Wash and pat dry the lettuce leaves. Use two large leaves per burger (one for the top and one for the bottom) to help hold everything together.
5. Assemble the burgers.
Place one lettuce leaf down and top with a cooked patty and melted cheese. Add tomato, onion, pickles, and your favorite sauces. Finish with the second lettuce leaf on top. Use a skewer or wrap in parchment paper for easier handling.
