Vegan King Oyster Mushroom Scallops
Ingredients:
4 King oyster mushrooms, cleaned and scored
1 tablespoon soy sauce (use a reduced-sodium version for a healthier option)
1 tablespoon minced garlic
1 teaspoon Sriracha sauce (or chili oil for added heat)
3 tablespoons water
Sliced green onions for garnish
Instructions:
Start by cleaning and scoring the King oyster mushrooms. Score the top of the mushrooms in a crisscross pattern, which will give them a scallop-like appearance.
In a small bowl, mix the soy sauce, minced garlic, Sriracha sauce (or chili oil), and water to create a marinade.
Place the scored King oyster mushrooms in a shallow dish and pour the marinade over them. Make sure the mushrooms are well-coated.
Let the mushrooms marinate for at least 15-20 minutes. You can marinate them longer if you prefer a stronger flavor.
Heat a non-stick skillet or pan over medium-high heat. Once hot, add the marinated King oyster mushrooms.
Cook the mushrooms until they are golden brown and have a slightly caramelized appearance. This should take about 4-5 minutes on each side. You can use a lid to help cook them through, or you can baste them with the marinade for extra flavor.
Once the mushrooms are cooked to your liking, transfer them to a serving plate. Garnish with sliced green onions.
