Vegan Homemade Bounty Bars 🌱🍫πŸ₯₯

Ingredients (Makes 8 bars)

For the Coconut Filling:

  • 2 cups unsweetened shredded coconut
  • ΒΌ cup coconut cream (or full-fat coconut milk)
  • 3 tbsp maple syrup (or agave syrup)
  • 1 tsp vanilla extract
  • 1 tbsp coconut oil
  • A pinch of salt

For the Chocolate Coating:

  • 200g (7 oz) vegan dark chocolate (70% cocoa or more)
  • 1 tsp coconut oil (for a smooth, glossy finish)

Instructions

  1. Make the Coconut Filling
    • In a bowl, mix shredded coconut, coconut cream, maple syrup, vanilla extract, coconut oil, and salt.
    • Stir well until the mixture sticks together when pressed.
    • If it’s too dry, add 1 more tbsp of coconut cream.
  2. Shape the Bars
    • Scoop out a portion and shape it into small rectangles or bars (about 2 inches long).
    • Place them on a parchment-lined tray and freeze for 30-40 minutes until firm.
  3. Melt the Chocolate
    • In a heatproof bowl, melt the vegan dark chocolate and coconut oil using a double boiler (or microwave in 30-second bursts, stirring in between).
  4. Coat the Bars
    • Using a fork, dip each frozen coconut bar into the melted chocolate, ensuring it’s fully coated.
    • Let the excess chocolate drip off, then place the coated bars back on the tray.
  5. Chill & Serve
    • Refrigerate for 10-15 minutes until the chocolate is set.
