Vegan Homemade Bounty Bars π±π«π₯₯

Ingredients (Makes 8 bars)
For the Coconut Filling:
- 2 cups unsweetened shredded coconut
- ΒΌ cup coconut cream (or full-fat coconut milk)
- 3 tbsp maple syrup (or agave syrup)
- 1 tsp vanilla extract
- 1 tbsp coconut oil
- A pinch of salt
For the Chocolate Coating:
- 200g (7 oz) vegan dark chocolate (70% cocoa or more)
- 1 tsp coconut oil (for a smooth, glossy finish)
Instructions
- Make the Coconut Filling
- In a bowl, mix shredded coconut, coconut cream, maple syrup, vanilla extract, coconut oil, and salt.
- Stir well until the mixture sticks together when pressed.
- If it’s too dry, add 1 more tbsp of coconut cream.
- Shape the Bars
- Scoop out a portion and shape it into small rectangles or bars (about 2 inches long).
- Place them on a parchment-lined tray and freeze for 30-40 minutes until firm.
- Melt the Chocolate
- In a heatproof bowl, melt the vegan dark chocolate and coconut oil using a double boiler (or microwave in 30-second bursts, stirring in between).
- Coat the Bars
- Using a fork, dip each frozen coconut bar into the melted chocolate, ensuring it’s fully coated.
- Let the excess chocolate drip off, then place the coated bars back on the tray.
- Chill & Serve
- Refrigerate for 10-15 minutes until the chocolate is set.
