Vegan Grinder Sandwich


Ingredients:
1 French baguette or sub roll
1 cup of cooked and seasoned vegan meat (such as seitan, tempeh, or tofu)
1 cup of sliced bell peppers (any color)
1 cup of sliced onions
1 cup of sliced mushrooms
1/2 cup of marinara sauce
1/2 cup of vegan cheese shreds (optional)
2 cloves of garlic, minced
2 tablespoons olive oil
Salt and pepper to taste
Fresh basil leaves (optional, for garnish)
Instructions:
Prepare the Vegan Meat: If your vegan meat isn’t pre-seasoned, marinate it in your choice of seasonings and spices for at least 15 minutes.
Sauté Vegetables: Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for a minute until fragrant. Then, add the sliced onions, bell peppers, and mushrooms. Sauté for 5-7 minutes, or until the vegetables are tender and slightly caramelized. Season with salt and pepper to taste.
Cook Vegan Meat: In a separate pan, cook your marinated vegan meat according to the package instructions until it’s browned and cooked through.
Assemble the Grinder:Preheat your oven to 350°F (175°C).
Cut the French baguette or sub roll in half lengthwise and scoop out some of the bread from the center to make room for the fillings.
Spread a layer of marinara sauce on both halves of the bread.
On the bottom half, layer the cooked vegan meat, followed by the sautéed vegetables. If you’re using vegan cheese, sprinkle it on top of the vegetables.
Place the top half of the bread on top to create a sandwich.
Wrap and Bake: Wrap the assembled grinder sandwich in aluminum foil and place it in the preheated oven. Bake for about 10-15 minutes, or until the bread is crispy and the cheese (if used) is melted.
Garnish and Serve: Remove from the oven, unwrap, and garnish with fresh basil leaves if desired. Slice the grinder into individual portions and serve hot.
